Hey, sweeties 😀 Did you know Milli makes the most-delectable Sweet Potato cupcakes in the world?! Well ... she does, and they're so amazing they've become one of our bestsellers. So you know what that means, right? These tasty treats are no longer a specialty cupcake, they're a regular flavor. We had a special order for a dozen a few weeks ago, and that was what tipped the scale in their favor. When they consistently sell out AND are ordered by the dozen to guarantee a customer gets as many as they want ... we realized we'd better keep them on hand. Look at those plump, moist cupcakes. And the freshly made sweet potato filling peeking out. I went to the grocery store and bought the sweet potatoes that made it. Ha! Bet you thought I was gonna say I made it. Nope. I have more patience for eating than I do for baking so I only bake when absolutely necessary. I decorate regularly, but when it comes to waiting for and paying attention to an oven timer ... let's just say I'm highly distractable.
The dozen above went out to the order, and another half dozen went out to a special friend of mine. She inboxed me when she saw that we would have these on hand the next day, and asked for six to be set aside. She was at the shop waiting when I arrived. 😂 As she ate one she said that may have been THE BEST cupcake she'd ever eaten. And I'll just note that she and her mother are pretty spectacular bakers themselves. We don't take that accolade lightly. Regular cupcakes are $3/ea and $30 for a dozen. Now through 10/6/18 I'm offering one dozen Sweet Potato cupcakes for $27. Order must be prepaid and requested at least 24 hours in advance. Yasss, it's going down at Cupcakes Bakery & Deli this week! I guess summer has everyone wanting BBQ so we're giving you what you want. There's also beef brisket cooking right now, too. 😀 We're serving up pulled pork sandwiches, rice and beans, potato salad, cole slaw, mac & cheese, collard greens, black-eyed peas ... all that. We've got Boston Cream, Red Velvet, Just Plain Vanilla, Double Chocolate - which can be turned into Triple Chocolate by adding chocolate sprinkles and syrup - and Dr. Pepper (one of my personal faves). Does any of this sound tasty to you? Just curious. CUSTOMER QUESTION: Do you freeze your cakes?
ANSWER: No, we do not freeze our cakes or cupcakes. First of all, we make cakes only by special order, and therefore, have no need of freezing them. They're made a day or two before pickup or delivery depending on size and difficulty, cooled and then placed in the fridge for ease of decorating. They're then placed in the fridge again upon completion of decoration because fresh food requires it. Second, being that are cakes are only made on special order, we don't have a standard/regular cake that we make and need to stockpile. This is also why cake orders must be prepaid and phoned in at least seven (7) days in advance. Third, freezing cakes/cupcakes diminishes moisture and flavor, and there's just no good reason for doing that. Our cupcakes are made fresh and have a 3-day shelf life decorated and about twice that if kept refrigerated not decorated. When you come into the shop and see cupcakes marked reduced, they're at the end of their shelf life - still great, but not today's. Frozen cupcakes and cakes, have most likely been trucked in from the company's regional facility within three days of baking, and then placed in the local market's freezer until scheduled to be thawed, decorated and placed out for sale. They're fine, diminished in moisture and flavor (or filled with preservatives), but not what you want for a once-in-a-lifetime occasion hoped to be remembered forever. And keep in mind ... these fresh, special order cakes and cupcakes cost more than frozen products because they're made just for you, one of kind and of a different quality. Right now - in January! - we have these delightful beauties for your taste sensation. A patron ordered these specialty cupcakes for a wedding taster, loved them, ordered them for the wedding and some to take home in the meantime. Well ... you know about baker's dozens and whatnot so we have some extra hanging around for you to love, too. Generally the day before New Year’s Eve in the kitchen pots are clanging and pans are banging in preparation of The Good Luck Feast, and dishes that represent Southern tradition are on my New Year’s Day menu. Many of the recipes have been passed down from generation to generation. Over the years variations have been tried and the rivalry between family members to show off their own culinary expertise has brought some very interesting results.
The soul food that shared centers around a love of food and family, memories of those gone before us and a rich cultural heritage. There are some staples of the New Year’s feast that a down-home cook must always include to guarantee a year of prosperity and much-deserved accolades.
Whether you believe in “peas for pennies, greens for dollars or bread for gold,” as good luck in the new year or not, these dishes are sure to afford you some mighty good eating. Wishing You and Yours A Blessed (prosperous) 2018! Milli Black-Eyed Peas 12oz package dry black-eyed peas 2-3 meaty ham hocks ½ c red bell pepper diced ½ c green bell pepper diced ¾ c onion diced 1 stalk celery chopped 2 cloves garlic crushed 2 tsps. Turmeric ½ tsp cayenne pepper Salt & pepper to taste Cover beans in water and soak overnight. Drain and sort. In a dutch oven saute vegetables with spices, add ham hocks, cover with water. Cook meat ½ hour add beans cook until meat is tender. Check beans occasionally you may need to add more hot water. Approximately 2 ½ to 3 hours. May be cooked in a crockpot overnight. You may use frozen beans. Cook meat thoroughly before adding beans. Tip: when cooking beans & greens add ½ to 1 tsp baking soda to the boiling pot. It'll foam for a few minutes releasing gases that can cause discomfort to sensitive digestive systems. 😊 |
