I made a taco casserole over the weekend, Sweeties.
We love tacos in our house, BUT I was too lazy to fry tortillas for shells and because I'm going to Louisiana today and this is perfect. It can be scooped and not assembly-lined to eat. People in my house don't serve themselves, they get served and since they wouldn't put their own tacos together, this is the next best thing.
You don't really need a recipe for taco casserole because you make it how you and your people like it, but I will share what I did 'cause it was good.
I try to use organic as much as possible and starting with the meat I browned a pound of Safeway O Organics grass-fed ground beef 80% fat. Season your meat if you want. I salt it for tacos, but not for the casserole because I'm putting so much stuff in it. To the meat I added enchilada sauce, black beans, green chilies and chopped olives. I have to sneak the olives in and that's why I use chopped.
In a casserole dish, I lined the bottom with O Organics blue corn tortilla chips with flax seeds. Next, a layer of shredded cheese and then meat mix. I put a layer of Late July organic jalapeno and lime yellow corn tortillas on top of the meat and more cheese. Last grouping is tortillas, meat and cheese, of course. I baked for 20 minutes on 350. You see the finished product above. It was good, y'all.
Again, make it how you like it and how your people enjoy it. But, this was good. If I weren't being lazy, I would have sauteed corn tortillas in butter and used them as layers as you would lasagna noodles, but my mom showed me this shortcut years ago and it works just as well, if not better. Speaking of Milli, I don't think she ever made hers with flavored tortilla chips, but ... I'm fancy, so. 😆

When Milli first began crafting gluten-free and vegan cupcakes she was a skeptic. She couldn't imagine how these desserts could achieve even a tenth of the deliciousness of her regular treats. In the beginning there was only GF chocolate. Then came vanilla. Today Milli makes GF Cookies 'n Cream, Red Velvet, Dr. Pepper, Confetti, Lemon and more. The shop has GF cupcakes daily.
Earlier this year Milli perfected her vegan cupcakes and now has a tastier and more varied collection. There are vegan vanilla most days. Other flavors are available when Milli bakes for special orders.

Earlier this week, we hosted The Brandt's for a 'Let's Decorate!' kids' decorating party. You can see by the smiles on their faces that they had a great time.
Decorating cupcakes is a treat for kids of all ages. You can stop in and decorate a single cupcake on your own Tuesdays through Saturdays or make it an event by booking a decorating party. Parties are scheduled in advance and include two (2) cupcakes, frosting and the decorations of choice for groups of four or more.
For those interested in learning professional decorating techniques, we offer packages for groups of six or more and usually host a few teaching parties each year.

We'd love for you to come in for lunch and enjoy a sandwich before dessert. I enjoy food that's the size of my head so we make delicious sandwiches that take up a whole plate. For the daintier eaters, our sands are big enough for two.
Hot or cold, our sandwiches are made to order and to delight.

We had the opportunity to make Katie's birthday cake this year. Her husband called in yesterday and asked if we made Black Forest Cherry (BFC). Guess what ... we do!
Milli can make just about anything; even if it's not a regular cake flavor. And cakes are made by special order only so patrons can make requests from quite an extensive menu.
One of the delights of our BFC cake are the dark chocolate chips that are baked into the cake. I don't quite know how it happens, but they melt and mesh perfectly for taste when the cake is complete and being enjoyed. I suppose it's just chocolate doing what it's made to do - make you feel in love, loved and lovely!
Black Forest Cherry is one of our most-popular special request flavors. We make our BFC with cherries inside and on top with buyer's choice of whipped cream, butter cream or cream cheese frosting. Katie's cake has whipped cream.
We made BFC with butter cream cupcakes with gold liners for a 50th anniversary party not too long ago. They were a big hit.
Above left shows the filling and on the right is the cake after the top layer has been placed.
Below left is the crumble being added. The right was a practice run for writing on the cake board because I haven't done it in a while. I know how to do a decent portion of what my mom does, but I only do it when necessary. I generally prefer doing things such as posting her delicious creations on this blog.
At last ... handing it over to another satisfied customer. This was his first time at our shop so we gave him a sample of the cake from the cut ends. He said we may be seeing more of him in the future than we expected. That's what we love to hear!

Some of the Eastern WA Sprint retail stores - Columbia Ctr. Dr., Kennewick, Yakima Valley Hwy, Sunnyside and Alder St., Walla Walla - have contracted us to make the desserts for their Customer Appreciation Days. And let me tell ya' ... they know how to throw a good party.
At Christmas, the Kennewick store partnered with a local radio station and gave away toys. They invited us to hang out and brought in a photo booth, too.
This month the Sunnyside store offered free face painting in addition to our delicious cupcakes.

A delicious and lightly flavored lemon cake with lemon and cream cheese filling, topped with snow white buttercream icing and lemon drizzle. Yum!
Do you see those big blocks of butter over there?! Yes, sweeties, this cake is homemade, handmade and full fat. Just like in the good old days before frozen and grocery desserts were everywhere. Haha!
I don't know about you, but that's the way, uh-huh, uh-huh, I like it.
I always say food/eating is a love language. Technically it's Acts of Service, but I know for sure Milli loves preparing delicious eats for and feeding others. And she put a lotta love into this one. I'm a witness.
