These fun cupcakes would make a great DIY project for the kids using your fav cake recipe. I used my super duper Chocolate Overload recipe. Cake mix and canned frosting work just as well.
What you need: 1. 6-12 cupcakes 2. Frosting 3. Crushed OREO cookies 4. Orange candy melts 5. Green frosting or green candies Directions Bake your cupcakes. Cool completely; save two to make carrots. Finely crush your cookies, put in a small bowl and set aside. Prepare your frosting or use canned. You need about 2 tablespoon of green frosting for the stems or use green candies. Starburst work great; you can roll them out and cut any shape you like. Take the two cupcakes you saved and crumble them into a bowl. Add 1 teaspoon of frosting to the crumbles and mix with a fork until the crumbs come together. You may need to add more frosting. You should be able to form a ball of cake that you can easily shape. This is your cake pop mixture. Use a spoon to divide your mixture into balls. Roll them until the ball is solid then squeeze into a carrot shape. Short and fat or long and skinny, they work fine. Place your carrots on a tray and pop them in the freezer while you frost your cupcakes. Make sure your frosting is spreading consistency so you don’t break your cupcakes. Now add a little or a lot of frosting to your cupcake and dip it into your cookie dirt. Continue until all of the cupcakes are covered. Now to finish your carrots. Melt your candy melts in the microwave for 45 seconds. I use a coffee mug for this because they are deep and have a handle to hold. Remove your melts and stir. Yyou will probably have chunks in your melts so continue to heat in 10 second intervals until smooth. Adding a small amount of shortening will help smooth the mixture. Remove your carrots from the freezer. Dip one at a time in your candy melts. If you have skewers you might use them to dip your pops. I use a spoon and a fork. Dip them with the spoon, use the fork to lift them and set on a wax paper lined plate or tray. Melts get very hot so be sure to help little ones with this stage. Candy melts dry quickly. You should now be able to “plant” your carrots. Cut a small hole in each cupcake and add your carrot and a stem topper. Now you have a super Easter treat that will make every “bunny” happy!
